Amaze and be amazed with a dish for the most refined palates.THE EXOTIC RISOTTO OF THE SUMMER Ingredients:- Rice (350gr)-Water (1 liter and a half)- Extra virgin olive oil- Strawberries (A Dozen)- Shallot (1)- White wine (Half glass) - Walnuts (3) - Apricot (1) - Ricotta (2 tbsp) - Fresh cheese (2 tbsp) - Pepper as neededPreparation:- Fry the finely chopped shallot in a little oil.- Add the rice and toast it for a couple of minutes- Pour in the white wine and let it evaporate.- Add the broth a little at a time and cook the rice (about 15/20 minutes).- Cook adding three chopped walnuts and dried apricot cut into small pieces.Turn off the rice and add two tablespoons of ricotta and fresh cheese.- Add the chopped strawberries.- Mix the rice and add a generous sprinkling of pepper.Bon Appétit!
