THE EXOTIC RISOTTO OF THE SUMMER RECIPE


Exotic lovers and not! A different but fascinating risotto...

Amaze and be amazed with a dish for the most refined palates.




Ingredients:

- Rice (350gr)

-Water (1 liter and a half)

- Extra virgin olive oil

- Strawberries (A Dozen)

- Shallot (1)

- White wine (Half glass)

- Walnuts (3)

- Apricot (1)

- Ricotta (2 tbsp)

- Fresh cheese (2 tbsp)

- Pepper as needed




Preparation:


- Fry the finely chopped shallot in a little oil.


- Add the rice and toast it for a couple of minutes


- Pour in the white wine and let it evaporate.


- Add the broth a little at a time and cook the rice (about 15/20 minutes).


- Cook adding three chopped walnuts and dried apricot cut into small pieces.


Turn off the rice and add two tablespoons of ricotta and fresh cheese.


- Add the chopped strawberries.


- Mix the rice and add a generous sprinkling of pepper.
