Like every Sunday, here are some of the tips and directions to improve your cooking skills day after day.











To prepare an excellent risotto ... Prepare a lot of vegetable or meat broth (in case you don't use it all, you can freeze it and use it in the future). How to prepare the pan:  heat oil or butter (depending on your culinary philosophy), add onion, shallot, spices and rice to taste at the end. Let it toast until the grains become bright, add white or red wine, grappa or cognac etc. When you need to add the broth, do it a little at a time until the rice is covered (always remembering to mix). When cooked, turn off the heat and mix the risotto with butter, spices, flavorings and cheese (remember, however, if the dish will be based on fish, you don't need cheese).
