SPAGHETTI WITH CLAMS AND WHITE WINE RECIPE


It is a poor but very tasty dish and is often put on the traditional Christmas Eve menu. The original version foresees that the dish is in "white", while in the variant called "macchiare" we find the cherry tomatoes. Spaghetti with clams are part of all the Italian tables now. For example, in the Venetian area, its presence has already been evidenced since the 18th century



SPAGHETTI WITH CLAMS

Ingredients: - Spaghetti (400gr) - Clams (40/50gr) - Olive oil - Cloves of garlic (2) - White wine (1/2 glass)

- Fresh parsley - Chili pepper - Salt and pepper


Preparation:

- Take a pot and boil the water. - Put salt. - Add a drizzle of oil to prevent the spaghetti from sticking during cooking. - Boil the spagghetti (about 10 minutes, depending on length and type) Meanwhile - Brown the garlic in the oil (2/3 minutes) - Pour the clams and raise the heat. - Add salt and pepper. - Add the wine and let it evaporate. - Cover with a lid and raise the heat again (5 minutes until the clams are completely open) - Add parsley and chilli pepper. - Add the pasta after boiling it and mix. - Keep 1 ladle of the cooking water and add it if necessary.
