Snow peas are the so-called “mangiatutto” in Italian, a word that derives from the widespread French name mangetout, they are found abundantly in season and are legumes of which you can also eat the pod.
Ingredients:
-Pasta (400 gr)
- Snow peas (300 gr)
-Tomato sauce (300 gr)
-Spring onion (1)
-Pepper as needed
-Garlic 2 cloves
-Olive oil to taste
- Basil (4/5 leaves)
- Chilli pepper (optional)
Preparation:
- Boil the snow peas in plenty of water for 10 minutes.
- In a saucepan, heat the oil with the garlic, the spring onion and the basil.
- Add the drained snow peas and cook for a couple of minutes.
- In the meantime, cook the pasta.
- Add the sauce to the first pot and bring to the boil.
- Add salt, pepper and chilli pepper.
- Cook for ten minutes on low heat.
- Drain the pasta, add it to the sauce and mix well.
Advices:
Do not throw away the cooking water but use it to cook the pasta, this will give more flavor to the whole.
If you don't feel like pasta, you can transform this dish into an excellent side dish for meat or fish.
