MALTAGLIATI WITH CHICKPEAS RECIPE


The chickpea is a herbaceous and annual plant. The seeds of this plant are chickpeas, legumes used in our diet and represent an excellent protein source.

The "maltagliati" are born as leftovers of fresh pasta used for other pasta formats such as tagliatelle.




Ingredients:

-Maltagliati (400gr)

- Chickpeas (400gr)

-Onion (1)

- Fresh fennel (Medium)

-Olive oil

-Salt to taste

-Pepper as needed

-Salvia (3 leaves)

- Chilli pepper (optional)



Preparation:


- In a saucepan, pour some oil.


- Finely chop the onion and fennel and let simmer on low heat until they become soft.


- Add the chickpeas and sage leaves.


- Add a liter of water and boil.


- Cook for about twenty minutes over medium heat by covering the pan with a lid.


- Add Maltagliati and cook.


- Add pepper and chilli pepper to taste.
