Lentils have a high protein content, butalso a good amount of sugars and a low amount of unsaturated fats. It is a perfect food for those who need an iron rich diet.
It is not only an excellent ingredient, but it is also very good and versatile.
Let's find out together the version with sausage and white wine.
Ingredients:
-Lentils (500gr)
- Pork sausage (500gr)
-Onion (2/3)
-White wine (1/2 glass)
-Olive oil to taste
-Salt to taste
-Pepper to taste
Preparation:
- After soaking the lentils, remove any residues
- Drain them and wash them in a colander under running water.
- Put them together in a saucepan and cover them with cold water so as to completely submerge them.
- Cook the lentils 20-40 minutes on low heat.
- We cut the sausage into small pieces and cook them in a non-stick pan without oil to degrease it.
- In a pan, cook the onion with oil over low heat, (when we see it, it will be ready)
- Add the lentils and the sausage.
- Raise the flame and pour half a glass of wine to evaporate it
- Add salt and pepper and cook for a couple of minutes, stirring on a low heat.
Advices:
Lentils increase in volume by at least 2 times when cooked, so it is necessary to dose the water well to prevent them from burning during cooking. Possibly if during the cooking phase the lentils have absorbed all the water but are not yet cooked, you can add more water, being careful to heat it first.
