All the best dishes you will do or will never taste will have a peculiarity in common. A dish that features tomato sauce is always good, but what would make it even better with a homemade fresh tomato sauce? Come and discover the real Italian recipe that will make every your dish a show of flavors.
Ingredients:- Ripe tomatoes (1,5 kg)- Olive oil (5 tbsp)- Garlic (2 cloves)- Fresh basil / oregano- Salt to taste- Sugar (A pinch)- Pepper as neede
Preparation:- Wash the tomatoes and cut the back of the tomato with a cross.- Fill a pot with water and add the tomatoes.- Boil everything (6/7 minutes).- This procedure is used to peel tomatoes easily. (Alternatively, after making the cross, you can put them in a bowl with water and cook in the microwave for 5 minutes).- Peel the tomatoes.- Cut them with a vegetable mill or with a blender.- Sift the sauce in a colander to remove the seeds. Thus obtaining the main tomato sauce.- Put the sauce back on a low heat and let it boil (about 20 minutes) removing the excess water and make it thicken.- In a pan heat the olive oil.- Add the garlic and 5/6 basil leaves. (They have to heat to give perfume to the oil)- Add the sauce and mix (10 minutes).- Add a pinch of sugar to remove the tomato acidity.- Add salt and pepper.- Cook for another 5 minutes.- Remove the garlic and crush it with the knife blade to insert it back into the sauce and mix.
Advices:
If you want to add minced meat, meat bites or fish to the sauce, after adding the garlic, add the meat or fish and brown them before adding the sauce.Tomato sauce, whether from ripe or canned tomatoes, should not overcook otherwise it will become more acidic and difficult to digest.If you want to make ragù, before adding the sauce, after browning the meat and adding the wine, cook the meat by adding water when necessary and only then add the sauce.With the fish, since cooking is faster, after adding the wine add the sauce and cook.
