Preparation:- Put 4 tablespoons of olive oil in a pan.- Add a knob of butter, basil, leek and celery, finely chopped and brown over low heat (2-3 minutes).- Add the tomato sauce and cook for 10 minutes.- Take the garlic and mash it until it is creamy and put it in the pan.- Add the fresh cheese, the parmesan and mix to make it melt.- Add black pepper and chilli to taste.- Add the pasta you prefer (which you have cooked in the meantime) and mix.(One more trick, keep half a ladle of the pasta cooking water, use it to mix the pasta in the sauce)
