FRITTATA WITH CHEESE HEART RECIPE


The Frittata is a classic dish, each version can reflect the season with fresh ingredients bought at the moment. It can also be a great way to start the day.



Ingredients:

-Eggs (5) // for two people

- Courgette (1)

- Stringy cheese (like mozzarella, caciocavallo)

- Sweet pepper (1)

-Olive oil to taste

-Porro (half)

- Chilli pepper (optional)

-Black pepper to taste







Preparation:


- Finely cut courgette, leek, cheese and sweet pepper. In a bowl beat the eggs very well adding the pepper.


- In a pan heat 3 tablespoons of oil and put courgette, leek and pepper, cook over low heat (1 minute)


- Put the vegetables in the beaten eggs.


- In another pan put a drizzle of oil and when it is hot pour half the egg mixture.


- Ready the first frittata to put it on a plate //


- Pour the other half of the mixture into the pan, when it begins to cook add the cheese sprinkling it over the whole frittata.


-At this point, take the first frittata and lay it on top of the other.


- Cover with a lid and cook over low heat (2 minutes)


- Remove the frittata and serve.



Advices:

To prepare the pepper, remove the stalk, open it in two and remove the seeds and the white nerves, this will make it more digestible.

It can also be prepared in advance, just heat it in a pot.
