Ingredients:

Preparation:

- In a pan put oil, 1 clove of garlic and heat.
- Add the tomato sauce.
- Cook everything for about 15 minutes.

How to prepare minced meat (optional):
- In a pan put the oil, the clove of garlic and heat.
- Add the meat and sauté.
- Pour in the wine and let all the liquid evaporate.
How to prepare Aubergine:
- Divide the aubergines in half along the longest part and remove the pulp with a spoon, trying not to break them. (Now the aubergine should be in the shape of a boat)
- Scald the boats in a pan with salted water for about 3/4 minutes.
- Drain them and keep them aside.
- In the same water, now boil the pulp you took from the aubergines.
- Drain and mash the pulp with a fork.
- In a bowl put the meat (remember to remove the garlic) that will have cooled.
- Add the egg, the aubergine pulp, the parsley, season with salt and pepper, add the chopped olives and the grated cheese. Mix everything very well.
- Take the "boats" and fill them with the mix you just got.
- Take an ovenproof dish and sprinkle the bottom with the sauce.
- Put the stuffed "boats" and cover them with the rest of the sauce.
- Put them in the oven at 180 ° for 30 minutes.

This recipe can be prepared in advance, frozen to eat on Sunday for lunch with the family.
With the same procedure, potatoes, peppers or courgettes can be stuffed.
